🥬 Throw Raw Cabbage Wedges and Chicken Thighs in the Slow Cooker — An Easy Comfort Dinner

This simple slow-cooker meal turns fresh cabbage wedges and juicy chicken thighs into a tender, flavorful dinner with very little hands-on work. The cabbage absorbs the savory chicken juices while slowly cooking until soft.

🛒 Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 medium head green cabbage
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1½ cups (360 ml) chicken broth
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 teaspoon salt, or to taste
  • ½ teaspoon onion powder
  • 1 tablespoon Worcestershire sauce, optional
  • 1 tablespoon lemon juice, optional

1. Prepare the cabbage

Remove any damaged outer leaves from the cabbage.

Cut it into 6–8 large wedges, keeping a little of the core attached so the wedges hold together during cooking.

Place the cabbage wedges in the bottom of the slow cooker.

2. Add the onion and garlic

Scatter the sliced onion and minced garlic around and between the cabbage wedges.

These aromatics will flavor the broth as everything cooks.

3. Season the chicken

Pat the chicken thighs dry with paper towels.

Combine the paprika, thyme, garlic powder, black pepper, salt, and onion powder. Rub the seasoning all over the chicken.

For extra flavor, briefly sear the thighs skin-side down in a hot skillet until golden before putting them in the slow cooker. This step is optional, but it gives the chicken better color and flavor.

4. Add everything to the slow cooker

Place the seasoned chicken thighs on top of the cabbage.

Pour the chicken broth around the chicken and cabbage rather than directly over the chicken skin.

Add Worcestershire sauce if using.

Cover and cook until the chicken is completely cooked through and the cabbage is tender:

  • LOW: approximately 5–6 hours
  • HIGH: approximately 3–4 hours

Cooking time varies depending on your slow cooker and the size of the chicken pieces.

The chicken should reach an internal temperature of 165°F (74°C) at the thickest part.

6. Finish the dish

Carefully remove the chicken and cabbage.

For a brighter flavor, drizzle the cabbage with a little lemon juice and spoon some of the flavorful cooking liquid over everything.

If you seared skin-on chicken beforehand, you can place the cooked chicken under a broiler for a few minutes to crisp the skin—watch it closely.

  • Don’t cut the cabbage too small; large wedges hold their shape better.
  • Bone-in chicken thighs tend to stay especially juicy during slow cooking.
  • Searing the chicken first is optional but gives you a richer flavor.
  • Avoid repeatedly lifting the slow-cooker lid because heat escapes and cooking takes longer.
  • Don’t overcrowd the cooker; arrange the ingredients in an even layer when possible.
  • Always verify that the chicken has reached 165°F/74°C before serving.

🍽️ What to Serve With It

The cabbage and chicken make a satisfying meal on their own, but you can serve them with mashed potatoes, rice, crusty bread, or roasted vegetables.

The finished dish is tender, savory, and comforting—and the cabbage becomes especially flavorful as it cooks underneath the chicken.
